Bacon Tomato Egg Toasties With Nature's Pride Bread

This recipe is a perfect breakfast-lunch-dinner recipe! it is good for all of them!  

I was given a chance to sample Nature's Pride Bread and try it out in on of my favorite recipes!  

Bacon Tomato Egg Toasties:

Here is what you will need:
Nature's Pride Bread (I used 100% Whole Wheat)
4-6 Eggs
4 slices of bacon
1/2 onion
1 fresh tomato or 1/2 can of sliced tomatoes (use what you have on hand!)
2 tsp Extra Virgin Olive Oil (EVOO)
Shredded Cheese (not pictured)
Optional spices:
Red pepper flakes
Salt  and Pepper

1. Preheat the oven to 400 degrees
2. Cut off the crust of your bread and use a rolling pin to flatten it out as much as you can.  Mold the bread into a muffin tin (butter the pan to make it non-stick) to make bread bowls.  You can make slits in the corners of the bread to make it fit better.  Put to the side.  

3. In a pan heat up the EVOO and chop up the onion and bacon and cook until the onion are translucent (about 3-4 minutes) add your spices and tomatoes and cook for another 3-4 minutes. (Picture A)
4. Crack Eggs into a little bowl and then transfer into the bread bowls in the muffin tins (Picture B)
4. Cover with the Bacon tomato mix and top with shredded cheese. (Picture C)
5. Cook in oven for 15 minutes at 400 degrees.
